The way we make it

From Our Oven to Your Table

Josh's Shop started on Canal Street with a small oven, a well-used dough scraper and a clear idea of what a neighbourhood pizza should be. Our dough ferments for 24 hours before it is stretched by hand and baked in a stone oven.

We choose ingredients for flavour and freshness, including produce from nearby suppliers when it is in season. The response from local families, workers and regulars has shaped the menu.
